Kobe beef is possibly the most internationally famous Japanese gastronomic product, and one of the most exclusive culinary experiences you can have in the country. To be labelled "Kobe Beef", the meat must meet extremely strict standards: it must come from Tajima cattle (a variant of wagyu) raised exclusively in Hyogo prefecture, with a minimum marbling index (BMS) of 6 out of 12, and it must be certified by the Kobe Beef Marketing and Distribution Promotion Association. There are only a few hundred authorised restaurants in all of Japan. In Kobe you will find teppanyaki (griddle), shabu-shabu and yakiniku options of Kobe Beef: the price of a 100-gram sirloin steak starts at around 5.000 ¥ and can exceed 15.000 ¥ in high-end establishments. For a more affordable experience, tasting menus with a Kobe Beef burger in restaurants of the Kitano-cho district start at around 3.000-4.000 ¥. Ask to see the certificate before paying to make sure of the authenticity.
